Concerning your story on structured water,
[

you may want to consider the other type of structured water, namely, inside proteins. My study of internal water is now dated,

but it proved fresh insights, based on high-resolution crystallographic data, that went beyond single or groups of water molecules to discuss the role of hydrogen bonding in proton (electron) transfer. In fact, almost every place I looked, when water was structurally integral to macromolecules, it had functional significance, and nature went to great lengths to exclude water when it was in the way.
